Tom Kha Gai


ni menu tengahari semlm,Tom Kha Gai..dah lama ade resepi ni cume baru semlm cube buat!!ok gok,rase cam tomyam cume ade rasa lemak2!!..sapa2 yang suke tomyam dan rase lemak2 bolih lah cube resepi ni...(ni bahan2 resepi originalnye,tp time buat ade yg bolih dikurangkan dan ditambah..ikut citarasa masing2).....

300g grated coconut
1 tsp salt
2 stalks lemongrass,lightly bruised & cut into 5cm lengths
200g young lengkuas,cut into thin wedges
3 shallots,bruised
3 cloves garlic,bruised
500g chicken,cut into small pieces
5-6 chili padi,bruised (bolih tambah jika suke pedas)
5 daun limau purut,torn into 4-5 pieces each
2 tbsp fish sauce
3 tbsp lime juice (suke masak tambah lg)
chopped coriander & spring onions (x bubuh pung,lupe!)
Add water to grated coconut to prepare 125ml first coconut milk and 750ml thin coconut milk.Boil thin coconut with salt,lemongrass,lengkuas,shallots and garlic.Add chicken and continue boiling over medium heat.Stir occasionally till chicken is tender.Add chilli padi,daun limau purut,fish sauce,lime juice and first coconut milk.Do not overboil.Garnish with coriander and spring onions.Serve hot..
